Survival strategy of a market with daily new entries

There was a bakery shop in the food-court of a tech-park I used to visit. This bakery employed a clever tactic to attract hungry customers to their sandwiches. They used to put the sandwich fillings along the edge where the two breads meet, giving it a visual appearance that the sandwiches were overloaded with fillings. Only after you bite the sandwich, you would know that what was seen from outside couldn't be found enough inside. By then, the sale was done. I used to wonder whether it was a sustainable model. Very few would buy the same sandwich ever again. However, the model can sustain if the target pool of customers is large enough and there are continuous new entries in the target pool.
